Tasty Tuesday Link up: Spicy Carrots

It's time for another yummy recipe her on the Blended Blog! I'm Sheila, the resident Italian and I'm here with another Italian recipe. I shared my pesto recipe a few weeks ago. This time I have an easy but tasty dish for a potluck: spicy carrots! The longer they sit, the more flavorful they get making this a great make-ahead dish. They can be served cold or at room temperature which makes it a good all-around dish! 
Spicy Carrots 


  • 6 carrots, peeled
  • 2 garlic cloves, peeled and chopped
  • 1 tsp origano
  • 1/2 to 1 tsp salt
  • 1/4 to 1/2 tsp crushed red pepper
  • 2 tbsp to 4 tbsp olive oil
  • 1 tbsp to 3 tbsp white wine vinegar


Slice the carrots into “coins” and place in a heat-proof bowl.  
 Steam them. I like to do this in the microwave. Put about one tablespoon of water in the bowl and cover it with plastic wrap. Cook on high (100%) for 4-6 minutes. However, you may use a steamer basket or your rice cooker. Basically steam them however you usually steam veggies. You want them to be crisp-tender, not mushy.
Drain and transfer cooked carrots to a serving bowl. Add remaining ingredients: garlic to vinegar.
Toss well. Let it sit for a few hours or overnight before serving. Stir occasionally so that all the flavors meld. Taste for salt and spiciness. Add more salt and red pepper if needed (we like ours SPICY!) Sometimes the carrots will absorb the liquid so you may need to add a bit more oil and/or vinegar.  It’s such an easy dish to make but it’s so tasty! Give it a try!
