Tasty Tuesday: a yummy summer salad

Shaunacey here :) I signed up ages ago for a "Tasty Tuesday" post and naturally remembered at virtually the last minute soooo if you're expecting an extravagant and complex recipe today, this is NOT that.

The good news? The dish I'm sharing is both easy AND delicious. Truth be told, once you read it, you can recreate it with very little reference back to this post. Plus, it's a total crowd-pleaser (just ask my coworkers who I shared with last week).

So I present to you, my tasty tomato, cucumber and basil salad:

 The real inspiration for this salad is my basil plant. I bought this little guy months ago with good intentions to 'make all the things' and, well, not kill the plant. Thankfully, my plant is thriving (and by 'thriving' I mean 'growing out of control') but I still hadn't used a leaf up until last week.

Sooooo, I decided to whip up a little salad for my teammates for our meeting.

Ingredients:

cherry tomatoes
cucumber
basil
bocconcini
lemon
olive oil
balsamic vinegar reduction


Are you wondering where the measurements are? Lol, the best part is you can put in how ever much you like and tweak it depending on your tastes.



I actually prepped the salad the night before - I used about 3 cups of cherry tomatoes (cut in half), 1 whole cucumber, a small container of bocconcini cheese (I sliced the individual balls in 4 so make the salad feel 'cheesier') and about 6-8 leaves of basil (torn up to spread the flavor).

Prior to putting in the fridge over night I squirted the juice from a quarter of a lemon over the salad and shook it up. I did this for both flavor and to help keep things fresh overnight.

If you do prep the salad in advance, I'd recommended draining it prior to mixing in the olive oil and balsamic - otherwise it'll be like soup.

Right before serving I drizzled some olive oil (about 1/3 - 1/2 cup) and balsamic reduction (a good 2-3 tablespoons) over the mixture. Then just stir and serve!




NOTE: you could make your own balsamic reduction, it's pretty easy to do; however, when I realized you could buy it ready made and just squirt it on... ya, sold. Plus, I just love having balsamic reduction on hand all the time.

That's it, now you have a delicious and easy summer salad to add to your repertoire!
