Tasty Tuesday: 3 easy recipes!

It’s Tasty Tuesday and have I got a yummy recipe for you! Three actually! 

The first one is so easy, I can hardly call it a recipe. It’s more of a procedure, a how-to.  These make a tasty side-dish or a yummy snack. The peppers roast up so sweet. I cook them whole then pull the seeds out by the "handle" when I eat them. Definitely finger food! 

Roasted mini peppers


Mini red, yellow and orange peppers, as many as you want
sea salt, to taste
extra virgin olive oil


Preheat oven to 400 degrees F (200 C). Spread peppers out on a cookie sheet. (It’s smart to line the sheet with foil or parchment to simplify cleanup.) If you are making a few for a snack, you can even use a toaster oven!

Bake for about 20 mins, turning the peppers occasionally so they get toasty on all sides. 

Serve with a drizzle of olive oil and some freshly grated sea salt. 

Roasted golden beet salad

This salad is so yummy! It’s super easy to put together if you roast the beets ahead of time. And again, you can use a toaster oven to speed things up! 


golden beets (or regular ones)
spring mix (or any combo of greens you like)
goat cheese (or blue cheese or feta)
garbanzo beans
sea salt, to taste
extra virgin olive oil


Roast beets at 400 degrees for about an hour. I test them with a fork to see if they are done. If the fork doesn’t go in, keep roasting in 10 minute intervals until it does. 

Let cool, the peel and chop into bite-size pieces. This can be done ahead of time and stored in the fridge until ready to use.

To assemble the salad, start with a layer of spring mix, romaine, spinach, arugula, or whatever combo you like. Then add crumbled goat cheese, the chopped beets, and garbanzo beans. You could even add sliced almonds or chopped pecans for crunch. 

Dress the salad with a quality extra-virgin olive oil, balsamic vinegar, and a generous sprinkle of sea salt. 

Okay one more. 

Everything-but-the-bagel chicken breast

My daughter works at Trader Joe’s and she is always bringing home new things for us to try. The latest was “Everything-but-the-bagel” seasoning. I grilled some thinly sliced chicken and sprinkled this on top. It was really good! How easy is that??
