Tasty Tuesday - Instant Pot Tuscan Chicken

Any one else obsessed with their Instant Pot??? I AM!!!

I've also been trying to eat fairly healthy (after a long period of eating quite poorly) and I'm always open to new, exciting recipes instead of eating chicken and broccoli (though, you'll see, this totally includes chicken and broccoli).

As far as Instant Pot recipes go, I've had the most success with recipes from Amy & Jacky They have a wide variety of recipes and I find the explanations easy to understand (some recipes are too confusing, am I right?).

I found this recipe for Tuscan Chicken and HAD to try it. I adapted it a little bit because I'm trying to go easy on dairy so I subbed almond milk for the heavy cream, used olive oil and butter but I did use the parmesan cheese because I had fresh stuff in the fridge and everything is better with cheese. I also didn't use spinach (primarily because I didn't have any lol).

Can I tell you how freaking good this was? OH MY GOODNESS!!! I could have eaten that sauce as soup lol. The recipe made ample sauce, enough that we used it as sauce on our pasta too! 

If you're an instant pot user you MUST make this and even if you don't own an instant pot, I'm sure you can make some adjustments to make this the good old fashion way.
