Tasty Tuesday Link Up 2

It's Tuesday, so it must be time for something tasty.  Unfortunately, I'm not the person for the job. My cooking skills are mediocre at best, and I usually stick to the basics.  Luckily my husband is a fantastic chef, so I called on him to save the day!

We are very fortunate to live in the Pacific Northwest, where the seafood is fresh and plentiful. My brother has a boat, and he keeps us stocked with salmon, tuna, crab and shrimp. Sometimes we even get to come along.


So what to do with all that fresh crab meat?  Make George's crab cakes!

Crab Cakes
(this recipe makes 4 cakes, but can be doubled)

2 C dungeness crab, shelled, cooked & shredded
3/4 C plain bread crumbs
1/4 C mayonnaise
2 scallions, chopped
1/4 C finely diced green pepper
1 tsp. garlic powder
1 tsp. onion
black pepper & red cayenne pepper to taste
1 mango & a bunch of cilantro for garnish

Combine all ingredients (except mango and cilantro) and mix well.  Press firmly into small, round cakes (the size of a hamburger patty, or you can use a biscuit press).  Heat a skillet to medium and add olive oil to coat the bottom.  Drop in crab cakes.  Cook for 3-4 minutes on each side, or until golden brown.  Serve on a bed of cilantro with chopped mango on top.

These crab cakes are always a big hit at our house.  Last week George made a batch to take to a friend who was stuck at home after surgery.  Delicious!
