Tasty Tuesday Link Up! Salmon...It's What's for dinner tonight!!

Welcome to Tasty Tuesday at The Blended Blog!  I'm Katie from The Mishaps and Mayhem of a Solitary Life with you today!  I'll be honest...when I signed up for another Tasty Tuesday post over here, I even shocked myself!  I mentioned in the last post I did, that I wasn't much of a cook. And at first I had no idea what I'd make.  Then a funny thing happened.  Last Friday a Hello Fresh box o' meals arrived at my door!  I had forgotten to skip the delivery!! So I spent the weekend cooking...and guess what?  Even though, I didn't pick them myself, these were some of the quickest and easiest recipes I'd ever made. I was so excited about it, that I wanted to share one of the recipes here with you today!

If you are unfamiliar with Hello Fresh, it's a food delivery service that provides you with everything you need to make your meals for the week.  I have been using it on and off now for about two years! I think it's perfect for a single girl like myself because the box of meals for 2 can garner me enough meals for an entire week. {I feel like I should let you know that this is not a compensated post, I just enjoy Hello Fresh...and using it is how I legit cook.}

I chose to share this Slammin' Lemon Salmon recipe today because it was super simple, and included some of my favorite ingredients (I'm talking to you BUTTER BEANS!!) and could easily be duplicated!  I've made many a Hello Fresh meal again and again, buying the same ingredients at the grocery store!!



I always get the fish option in my meals because I honestly wouldn't cook it otherwise for myself.  It's not always on sale at the grocery store and when it is, the portion is minuscule for the price.  With Hello Fresh, I know I'll get great pieces of fish, and I really like cooking it the way they instruct, it always comes out great!  And this is basically a one pot meal, which makes for easy clean up!!

So enough of my yammering, on to the recipe:

Slammin Lemon Salmon for 2 (could easily be doubled!) 

Salmon filet
1 large red onion
1 lemon
 2 cloves of garlic
1 box/can of butter beans, rinsed and drained
1 zucchini
1 small bag of sugar snap peas (4 oz for 2)
Dijon mustard
1 tsp coriander
vegetable stock
cilantro (1 bunch)

{Kitchen staples :Olive oil, Butter, Salt and Pepper}

{ONE}
Preparing all the veggies for me always takes the longest, but for those who are more experienced in the kitchen, dicing the onion, roughly chopping the cilantro, and cutting the zucchini into half inch pieces will be a breeze!  They say to mince the garlic as prep first too, but I have that thin stick-like grater thing (I'm sure it has a better name!) so I grate it over the pan when the time comes!


{TWO}
Heat a drizzle of olive oil in a large pan over medium/high heat adding in onions and tossing until softened.  (about 5 min)
Add in the snap peas and zucchini cooking until the snap peas are tender but still crisp and the zucchini has softened. (3-4 min)
Remove from pan, set aside and cover with aluminum foil to keep warm.


{THREE}
In the same pan, heat another drizzle of olive oil. Season the salmon on both sides with salt and pepper.  Place in the pan, skin side down, cooking until almost opaque...2-3 minutes, per side!  Add to the pan one tablespoon of butter and the juice of half the lemon, continuously spooning the lemon and butter over the salmon until cooked thru...1-2 minutes! Remove from pan and set aside. Cover with foil to keep warm.


{FOUR}
Lower the heat on the pan, grating/mincing in the garlic, and cook until fragrant.  Adding 1 tsp Dijon mustard and 1 tsp coriander, stirring.  Add in the butter beans and return the veggie mixture to the pan, tossing til warm.  Season with salt and pepper.


{FIVE}
Add 1/4 cup of vegetable stock, simmering until slightly reduced (about 3 minutes)
Hello Fresh sends a vegetable stock concentrate to which 1/4 cup water is added.  Since vegetable stock is readily available in the supermarket, I just included it here, but more or less of the stock can be added based on what you think!
Stir in half the cilantro.


{Plate and Enjoy}
Plate the veggie and bean mixture and top that with salmon, dressing with another squeeze of lemon and more cilantro.  Enjoy with your favorite beverage of choice!!


Cilantro has never been my fave, so I use very little of it...I thought after the fact that maybe I wanted to omit it all together but this was still absolutely delish and something I intend on making again.
