Tasty Tuesday - Meal Prep 101

Hi friends! Welcome to Tasty Tuesday! I'm probably the least likely of the group to host today, but I'll give it my best shot. Let me tell you, I pretty much hate cooking. If it doesn't involve a microwave or easy oven/stovetop, I'm out. Seriously, when I look at recipes and there are more than like 3 ingredients, I'll probably pass.



Alas, since I am no longer a college student, I need to stop eating like one. I'm talking pizza, mac and cheese, sandwiches and the like. When I went to my doctor a few weeks back, he was like, "well, your diet isn't bad, but there is certainly room for improvement." Ha. He is very nice :) So it is time for me to start planning and coordinating my meals.

This is my first week doing a little meal prep, and I'm proud to say that I made a variation of this recipe for turkey meatballs with quinoa. When I say variation, I mean the sriracha in our house was way expired and ended up with more honey gazed than anything.  :)

I'm also trying to make smoothies in the morning and can't wait to try this one. I mean, how can I turn down cookie dough?

So tell me, do you have any tips and tricks for this meal planning newbie? Especially one that pretty much hate veggies.
